  • Hawaiian Rice Salad

    Ingredients

    • SALAD-----
    • 1 1/2 c. Cooked Brown rice
    • 1 c. Tiny broccoli florets Steamed and chilled
    • 2/3 c. Diced hard tofu
    • 1 c. Fresh pineapple chunks Well liquid removed (reserve juice For dressing)
    • 1/3 c. Slivered almonds -- lightly Toasted
    • 2 Tbsp. Finely minced scallions White part only
    • 1 lrg Carrot -- finely minced
    • 1/3 c. Raisins or possibly dry Cranberries
    • 1/3 c. Minced water chestnuts SWEET SESAME DRESSING-----
    • 2/3 c. Fresh pineapple juice (reserved from above
    • 1 Tbsp. Sesame seeds -- lightly Toasted
    • 1 tsp Grated ginger root
    • 1 tsp Chopped garlic
    • 1 tsp Brown sugar Splash soy sauce Splash brown rice vinegar Or possibly cider vinegar

    Directions

    1. Salad:In a large mixing bowl, toss together all ingredients except dressing. Add in dressing and toss again till thoroughly coated.
    2. Serves 2.
    3. Dressing:In a small saucepan, combine all ingredients. Bring to a simmer and cook ovr low heat, stirring occasionally, till the liquid has thickened and reduced, about 7 min. Remove from heat and let cold at room temperature.
    4. Makes about 1/2 c..
