Hawaiian Pineapple Snack Cake
This is a yummy cake that is good with or without frosting. It has no oil or fat in the cake itself. Ingredients
- 2 eggs
- 2 cups sugar
- 2 tsp. baking soda
- 2 cups flour
- 20 oz. can crushed pineapples, and juice
- 1 cup coconut
- 1 cup nuts (pecans or walnuts)
- Frosting, optional:
- 8 ounces cream cheese (room temp)
- 1 stick butter (room temp)
- 1 box powdered sugar
- 1 T. milk
Directions
- Cream eggs and sugar.
- Then, add baking soda, flour, pineapples and juice, coconut, and finally nuts.
- Pour into a greased 9x12" pan.
- Bake at 350 degrees for 30 minutes.
- Frost when cool with cream cheese frosting, if desired.
- To make frosting: mix together cream cheese and butter.
- Then, add a 1 pound box of powdered sugar until it becomes the
- proper consistency to spread.
- Thin with a little milk, if necessary.
