    Hawaiian Pineapple Snack Cake

    This is a yummy cake that is good with or without frosting. It has no oil or fat in the cake itself.

    Ingredients

    • 2 eggs
    • 2 cups sugar
    • 2 tsp. baking soda
    • 2 cups flour
    • 20 oz. can crushed pineapples, and juice
    • 1 cup coconut
    • 1 cup nuts (pecans or walnuts)
    • Frosting, optional:
    • 8 ounces cream cheese (room temp)
    • 1 stick butter (room temp)
    • 1 box powdered sugar
    • 1 T. milk

    Directions

    1. Cream eggs and sugar.
    2. Then, add baking soda, flour, pineapples and juice, coconut, and finally nuts.
    3. Pour into a greased 9x12" pan.
    4. Bake at 350 degrees for 30 minutes.
    5. Frost when cool with cream cheese frosting, if desired.
    6. To make frosting: mix together cream cheese and butter.
    7. Then, add a 1 pound box of powdered sugar until it becomes the
    8. proper consistency to spread.
    9. Thin with a little milk, if necessary.
