  • Hamburger And Rice Casserole

    Ingredients

    • 1 lb Grnd chicken breast, skinless, cooked
    • 1 x Egg white, whipped
    • 1/2 c. Mashed potatoes
    • 1/2 c. Long-grain rice, uncooked
    • 1/4 c. Evaporated skim lowfat milk
    • 1/2 c. Onions, minced
    • 1/2 c. Bell peppers
    • 2 tsp Salt
    • 1/2 tsp Black pepper
    • 1/4 tsp Poultry seasoning
    • 1/2 c. Ketchup
    • 1 Tbsp. Honey

    Directions

    1. This is very good! However, I think I will cook the rice first next time since I will not have to bake it as long. Enjoy:-)
    2. Preheat oven to 350. In a mixing bowl, combine chicken, egg white, mashed potatoes, rice, evaporated skim lowfat milk, onions, bell peppers, salt, black pepper, and poultry seasoning. Spread proportionately into a 8" casserole dish.
    3. Bake, covered, for 1 hour. Meanwhile in another mixing bowl, combine ketchup and honey. Remove cover and spread onto baked chicken mix. Bake 30 min more or possibly till rice is done.
