I combat that by placing the ham in a large skillet filled with simmering water. Off heat I let it steep for 10-15 minutes. That does the trick. I trim out the little round bone and any extraneous fat or gristle. For my ham burgers I then run the meat through my grinder, add 2 eggs and 1/2 cup plain bread crumbs, and a few tablespoons of mayonnaise. I form the resulting mixture into 3 "burgers" which then get seared for 2-3 minutes per side before serving. A slice of cheese on top of each is a nice addition for the last minute of searing. Ingredients
- 1 ham steak
- 1/2 cup plain bread crumbs
- 2-3 tablespoons mayonnaise
- 3 slices of your favorite melting cheese
Directions
- Simmer a skillet full of water.
- Place the ham steak in it for 10 minutes.
- Trim out the little round bone and any extraneous fat.
- Grind in a dedicated meat grinder or in your food processor.
- Form into burgers and top each with a slice of cheese.
- Place in a hot skillet with a skim of oil in it.
- After 2-3 minutes transfer the pan to your broiler for an additional 2-3 minutes.
- Add cheese for the last minute.
