    I love those ham steaks you can get at most any supermarket. One drawback is that the salt level is pretty high. I combat that by placing the ham in a large skillet filled with simmering water. Off heat I let it steep for 10-15 minutes. That does the trick. I trim out the little round bone and any extraneous fat or gristle. For my ham burgers I then run the meat through my grinder, add 2 eggs and 1/2 cup plain bread crumbs, and a few tablespoons of mayonnaise. I form the resulting mixture into 3 "burgers" which then get seared for 2-3 minutes per side before serving. A slice of cheese on top of each is a nice addition for the last minute of searing.

    Ingredients

    • 1 ham steak
    • 1/2 cup plain bread crumbs
    • 2-3 tablespoons mayonnaise
    • 3 slices of your favorite melting cheese

    Directions

    1. Simmer a skillet full of water.
    2. Place the ham steak in it for 10 minutes.
    3. Trim out the little round bone and any extraneous fat.
    4. Grind in a dedicated meat grinder or in your food processor.
    5. Form into burgers and top each with a slice of cheese.
    6. Place in a hot skillet with a skim of oil in it.
    7. After 2-3 minutes transfer the pan to your broiler for an additional 2-3 minutes.
    8. Add cheese for the last minute.
