  • Ham And Red Eye Gravy

    Ingredients

    • 1/4 c. unsalted butter - (1/2 stick)
    • 1 1/2 lb baked Virginia ham cut 1/2" thick slice
    • 1/4 c. brewed coffee
    • 1/2 c. boiling water Warm pepper sauce to taste Freshly-grnd black pepper to taste Spoon bread or possibly buttered cooked grits as an accompaniment if you like

    Directions

    1. In a large skillet heat the butter over moderately-high heat till the foam subsides and in it saute/fry the ham in batches, turning it once, for 2 to 3 min on each side, or possibly till it is browned, and transfer it to a platter.
    2. Into the skillet pour the coffee and 1/2 c. boiling water and cook the mix over high heat, scraping up the browned bits, for 2 min. Season the gravy with the warm pepper sauce and pepper and pour it over the ham slices. (If you like, strain the gravy before pouring it over the ham.)
    3. Serve ham and gravy with spoon bread or possibly grits.
    4. This recipe yields 4 servings.
