  • Ham And Egg Breakfast Pizza

    Ingredients

    • 4 Tbsp. butter divided
    • 2 Tbsp. flour
    • 1/3 c. 2% lowfat milk
    • 6 x Large eggs beaten
    • 1/2 tsp salt
    • 1 x pizza crust - (12" dia)
    • 2 c. diced ham
    • 2 c. shredded mozzarella cheese
    • 1 can sliced mushrooms - (4 ounce) liquid removed
    • 1/4 c. thinly-sliced green onion

    Directions

    1. Heat oven to 400 degrees.
    2. In a small saucepan, heat 2 Tbsp. butter over medium heat. Add in flour; cook for 1 minute, stirring constantly. Add in lowfat milk and cook till mix thickens slightly. Remove from heat.
    3. In a small skillet, heat remaining 2 Tbsp. butter over medium heat. Add in Large eggs and cook, stirring gently, till softly scrambled. Combine lowfat milk sauce with Large eggs; stir in salt.
    4. Place pizza crust on a baking sheet and spread Large eggs over the top. Top with ham, cheese, mushrooms and green onion. Bake 15 to 20 min or possibly till cheese is melted and bubbly.
    5. This recipe yields 6 servings.
