    You know what a fan I am of veggies and cheese so this salad rocked my world. I didn't have an issue finding Haloumi in the artisan cheese section of my grocery store, but it was expensive. I did notice a few other options called "grilling cheese" that were less expensive I might try next time. It also reminded me a lot of cheese curds, so I think you could substitute those easily. They also don't melt easily and would stand up to the frying.

    Ingredients

    • 1 package Haloumi, cut into 4 equal slices
    • oil for frying, just enough to coat the pan, it's not deep fried
    • 4 tomatoes (I used roma, but heirloom would probably also be delicious), diced
    • 1 cucumber, seeded and diced
    • arugula or other salad mix
    • 1/2 c Kalamata olives
    • 4 T olive oil
    • 1 T lemon juice
    • 1 T chopped fresh oregano

    Directions

    1. Prepare your veggies and salad.
    2. Mix together the lemon juice and oregano and whisk in the olive oil to make a dressing.
    3. Dress your salad as desired.
    4. In a skillet heat your oil.
    5. Fry the cheese slices about 2 minutes on each side until golden.
    6. Serve over the salad.

      I loved the salty haloumi cheese combine with the fresh arugula and juicy roma tomatoes. This is a classic salad that makes me dream of a summer evening meal in a seaside restaurant in Greece. Now can someone please pass the Calamari?
