Haloumi Salad

I didn't have an issue finding Haloumi in the artisan cheese section of my grocery store, but it was expensive. I did notice a few other options called "grilling cheese" that were less expensive I might try next time. It also reminded me a lot of cheese curds, so I think you could substitute those easily. They also don't melt easily and would stand up to the frying. Ingredients
- 1 package Haloumi, cut into 4 equal slices
- oil for frying, just enough to coat the pan, it's not deep fried
- 4 tomatoes (I used roma, but heirloom would probably also be delicious), diced
- 1 cucumber, seeded and diced
- arugula or other salad mix
- 1/2 c Kalamata olives
- 4 T olive oil
- 1 T lemon juice
- 1 T chopped fresh oregano
Directions
- Prepare your veggies and salad.
- Mix together the lemon juice and oregano and whisk in the olive oil to make a dressing.
- Dress your salad as desired.
- In a skillet heat your oil.
- Fry the cheese slices about 2 minutes on each side until golden.
- Serve over the salad.
