Halloumi And Tomato In Pitta Bread
Ingredients
- 4 x Pitta breads, split
- 350 gm Halloumi cheese, sliced (12 ounce)
- 4 med Tomatoes, sliced
- 100 gm Crispheart lettuce, (4oz)
- 1 1/2 x Cucumber, sliced lengthways, very thinly
Directions
- Preheat the grill till warm.
- Grill the halloumi for 3-4 min, turning half way through till golden. Grill the pitta bread till hot. Spill the pitta in half widthways then layer on the lettuce, halloumi and tomato. Sprinkle with a healthy pinch of salt - not too much as halloumi is very salty. Close the lid of pitta and cut in half or possibly thirds.
- Serve with crisps, a little lettuce and a few black olives.
