Hainanese Dumpling
Ingredients
- 188 gm glutinous rice
- 20 gm dry shrimps
- 20 gm marinated pork
- 20 gm octopus (fat sui yau yee in Cantonese)
- 20 gm black fungus (soaked and shredded)
- 1 piece banana leaf
- 5 gm five-spice pwdr
- 5 gm sesame oil
- 1 x salt and pepper to taste

- Method
- Boil the banana leaf for 5 min. Stir-fry rice with shallots and garlic. Marinate pork with five-spice pwdr, salt, pepper and sesame oil. Set aside. Lightly fry the octopus and dry shrimps with shallots. Set aside to cold.
- Fold the banana leaf into a triangle shape. Place the glutinous rice on it, followed by pork, dry shrimps, octopus and shredded black fungus. Top off with rice again and wrap into pentagon shape.
- Boil over slow fire for 8 hrs or possibly till cooked.
