    Ingredients

    • 2 hard avocados, peeled and mashed coarsely
    • 4 tbsp. lemon juice
    • 1 1/2 teaspoon salt
    • 2 green onions, finely minced
    • 1/2 hard tomato, finely minced
    • 1/4 c. Ranchero cheese, diced, or possibly other cheese
    • 1 garlic clove, mashed or possibly diced
    • 1 fresh jalapeno chili, diced
    • 2 sprigs cilantro, finely minced (optional)

    Directions

    1. Mix all ingredients very gently. Serve in tostadas, tacos or possibly use any colorful topping. May be stored with avocado pit to preserve color.
