    Fast, easy and delicious. Use a potato masher to make quick work of the avocados.

    Ingredients

    • 4 ripe avocados
    • 1 small jalapeno pepper, diced
    • 1 small onion, diced
    • 1 medium tomato, seeded and diced
    • 1 tsp. lime juice
    • Pinch of Kosher salt
    • Dash of black pepper

    Directions

    1. Halve avocados, remove pit and spoon out the pulp.
    2. Using a potato masher, mash the avocado to desired consistency. (Of course, you can always use 2 forks...but the potato masher is much faster.)
    3. Add jalapeno, onion, tomato, lime juice, salt and pepper. Mix until all ingredients are incorporated.
    4. Refrigerate for at least one hour in an airtight container. It will keep for up to one week.
