  • Ground Beef Rice Skillet

    Ingredients

    • 1 pound grnd beef
    • 4 tbsp. veg. oil
    • 1 c. minced onion
    • 1 c. bias cut celery 1/2 inch thick
    • 1 clove chopped garlic or possibly garlic pwdr to taste
    • 1/2 c. minced green pepper
    • 1 (4 ounce.) can mushroom slices and pcs, liquid removed
    • 2 c. cooked regular rice
    • 1 c. fresh peas or possibly frzn peas, thawed
    • 12 cherry tomatoes, halved
    • 1 teaspoon beef bouillon granules
    • 2 tbsp. water

    Directions

    1. Prepare and assemble ingredients before starting to cook. Brown grnd beef in 12 inch skillet over medium high heat about 5 min. Push browned beef to one side of skillet. Add in oil, onion, celery and garlic, stir-fry 2 min. Cover and cook one more minute. Add in green pepper and mushrooms. Stir-fry 2 min. Push vegetables to other side of skillet. Add in remaining 3 Tbsp. oil to center of skillet. Add in rice cook and stir-fry 2 min. Add in remaining ingredients together and continue cooking and stirring till tomatoes and peas are warm. About 2 min.
