Ground Beef, Rice And Cabbage Hot Pot
Ingredients
- 1 lb grnd round
- 2 c. finely minced onions
- 2 x cloves chopped garlic
- 6 c. fat-free chicken broth
- 1/2 c. ketchup
- 3 c. cabbage finely shredded, coa
- 1 c. long-grain white rice
- 1 1/2 c. frzn corn kernels
- 1 lrg carrot peeled & sliced
- 2 tsp dry thyme leaves
- 1 tsp granulated sugar
- 1 x bay leaf
- 1/4 tsp grnd cinnamon
- 1/4 tsp black pepper
- 1 pch salt to taste (optional)
Directions
- In large skillet, combine grnd round, onion and garlic,. Cook over medium heat, stirring frequently, till beef has changed color.
- Turn out meat mix onto large plate lined with paper towels to absorb any excess fat.
- Transfer meat mix to crock pot. Add in all other ingredients except salt. Stir to mix well.
- Cover and cook on low setting 5-1/2 to 6 hrs, or possibly till rice is cooked and flavours are well blended. Remove and throw away bay leaf. Add in salt, if you like.
