  • Ground Beef And Potato Roll With Oniongravy

    Ingredients

    • 2 lbs. very lean grnd beef
    • 1 1/2 c. minced onion
    • 1/2 c. seasoned bread crumbs
    • 2 large eggs
    • 2 teaspoon garlic pwdr
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 1/2 c. mashed potatoes
    • 1 c. plain yogurt
    • 2 T minced parsley
    • 4 T butter
    • 3 T flour
    • 2 c. beef broth

    Directions

    1. Put together beef, 1/2 cup onion, bread crumbs, large eggs, garlic, 1/2 tsp salt and 1/4 tsp black pepper in bowl.Put together potatoes, 1/2 cup yogurt, parsley, remaining salt and pepper in small bowl.
    2. Spread beef mix on waxed paper to create rectangle. Spread on potato mix, leaving 1/2 inch border. Using waxed paper as guide, starting from a long side, roll up. Place in 13x9 inch baking dish.
    3. Bake in preheated 350 degree oven for 45 min.
    4. Cook 1 cup onions in butter in small saucepan till tender (4 min). Whisk in flour, cook, stirring, 4 min till thickened. Gradually stir in broth; cook stirring 4 min till thickened and bubbly. Stir in remaining yogurt. Gently heat through. Remove loaf from dish. Serve with gravy.
