Ground Beef And Potato Roll With Oniongravy
Ingredients
- 2 lbs. very lean grnd beef
- 1 1/2 c. minced onion
- 1/2 c. seasoned bread crumbs
- 2 large eggs
- 2 teaspoon garlic pwdr
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 c. mashed potatoes
- 1 c. plain yogurt
- 2 T minced parsley
- 4 T butter
- 3 T flour
- 2 c. beef broth
Directions
- Put together beef, 1/2 cup onion, bread crumbs, large eggs, garlic, 1/2 tsp salt and 1/4 tsp black pepper in bowl.Put together potatoes, 1/2 cup yogurt, parsley, remaining salt and pepper in small bowl.
- Spread beef mix on waxed paper to create rectangle. Spread on potato mix, leaving 1/2 inch border. Using waxed paper as guide, starting from a long side, roll up. Place in 13x9 inch baking dish.
- Bake in preheated 350 degree oven for 45 min.
- Cook 1 cup onions in butter in small saucepan till tender (4 min). Whisk in flour, cook, stirring, 4 min till thickened. Gradually stir in broth; cook stirring 4 min till thickened and bubbly. Stir in remaining yogurt. Gently heat through. Remove loaf from dish. Serve with gravy.
