Grilled Tuna with Wasabi Mash
Ingredients
- WASABI MASHED POTATO
- 4 medium Idaho Potatoes
- 1/8 cup milk
- 1.5 tablespoons butter
- 2 tablespoons wasabi ( or to taste 0
- Directions
- Boil potatoes until fork tender. Drain and whip with remaining ingredients. Keep WARM
- CARROT GINGER SAUCE
- 1 pounds carrots, cleaned, coarse chop
- 1/8 cup shallots, chopped
- 1/8 cup ginger, chopped
- 1/8 cup mirin (sweet sake)
- 1/8 cup sake
- 2 (6-ounce) tuna steaks
- Place all ingredients is a saucepan. Bring to a simmer and cook until carrots are tender. Puree in a food processor, and push through a chinois.
- Soy Glaze
- 1/8 cup fresh lime juice
- 1 tablespoons soy sauce
- 1 tablespoons molasses
- 2 teaspoons chili garlic sauce
- 1/4 teaspoon Chinese five spice
- Place in small pan and simmer 4 minutes until thick/syrupy.
- Assembly: Sear tuna ON a hot grill. Place on a plate and glaze. Surround with carrot ginger sauce and serve with mashed potatoes.
