  • Grilled Stuffed Zucchini

    Ingredients

    • 4 med zucchini
    • 1 1/2 c. finely minced Oyster mushroom
    • 1 1/2 c. cooked crabmeat
    • 1/4 c. minced green onion
    • 2 Tbsp. minced fresh parsley
    • 1 Tbsp. minced garlic
    • 2 Tbsp. extra virgin olive oil
    • 2 Tbsp. balsamic vinegar
    • 1 1/2 tsp salt
    • 1 pch black pepper

    Directions

    1. Cut ends off zucchini and cut in half lengthwise. Use a tsp. to remove seeds. Trim small slice off uncut length of zucchini so it sits flat.
    2. In a large bowl combine mushrooms, crab, green onions, parsley, garlic, oil, vinegar, salt and pepper.
    3. Lightly pack stuffing into zucchini boats.
    4. Preheat grill to medium and lightly oil grill rack. Grill for 8-9 min, flat-side down, till zucchini is tender-crisp, grill marks are apparent and stuffing is heated through. Remove from grill serve immediately. (These are also good cool.)
