Grilled Stuffed Zucchini
Ingredients
- 4 med zucchini
- 1 1/2 c. finely minced Oyster mushroom
- 1 1/2 c. cooked crabmeat
- 1/4 c. minced green onion
- 2 Tbsp. minced fresh parsley
- 1 Tbsp. minced garlic
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. balsamic vinegar
- 1 1/2 tsp salt
- 1 pch black pepper
Directions
- Cut ends off zucchini and cut in half lengthwise. Use a tsp. to remove seeds. Trim small slice off uncut length of zucchini so it sits flat.
- In a large bowl combine mushrooms, crab, green onions, parsley, garlic, oil, vinegar, salt and pepper.
- Lightly pack stuffing into zucchini boats.
- Preheat grill to medium and lightly oil grill rack. Grill for 8-9 min, flat-side down, till zucchini is tender-crisp, grill marks are apparent and stuffing is heated through. Remove from grill serve immediately. (These are also good cool.)
