  • Grilled Salmon with Tomatoes and Basil

    Serve this dish when tomatoes are at their best. They and the basil really make this dish. We've made it twice and think it deserves posting. We got it from Eating Well

    Ingredients

    • 2 cloves garlic, minced
    • 1 tsp kosher salt divided (3/4 and 1/4)
    • 1tbs extra virgin olive oil
    • 1 side of salmon or 4 filets (about 1-1/2#)
    • 1/3 C plus 1/4 C thinly sliced basil, divided
    • 2 medium tomatoes, sliced
    • 1/4 tsp ground black pepper

    Directions

    1. preheat grill to medium
    2. make a paste of the minced garlic 3/4 tsp salt
    3. in a cup or bowl mix the paste with the olive oil
    4. make a double layer of regular aluminum foil and coat with Pam
    5. put salmon on foil skin down
    6. spread the paste/oil mixture on top of salmon
    7. sprinkle with 1/3 C basil
    8. overlap tomatoes slices on top
    9. sprinkle the remaining 1/4 tsp salt and the pepper
    10. transfer the salmon on the foil to the grill (do not remove the salmon from the foil - the foil keeps it from burning as the salmon cooks skin down the entire time)
    11. grill until done - about 16 minutes on my 3-burner Weber with all 3 burners at medium
    12. when ready to serve, sprinkle the remaining 1/4 C basil
