  • Grilled Salmon With Sherry Vinegar Honey Glaze

    Ingredients

    • 1 c. sherry vinegar
    • 2 Tbsp. Dijon mustard
    • 1/4 c. honey
    • 1 Tbsp. Worcestershire sauce
    • 1 Tbsp. ancho chile pwdr Salt to taste Freshly-grnd black pepper to taste
    • 4 x salmon fillets - (6 ounce ea)
    • 2 med ripe tomatoes minced
    • 2 Tbsp. finely-diced Spanish onion
    • 2 Tbsp. minced parsley
    • 1 tsp red pepper flakes
    • 1/4 c. red wine vinegar
    • 1/4 c. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. In small saucepan over high heat, reduce vinegar to 1/4 c.. In mixing bowl, combine vinegar syrup with mustard, honey, Worcestershire and ancho chile pwdr and season to taste with salt and pepper. Let rest 30 min.
    2. Preheat grill. Brush salmon with the glaze and grill 3 min on each side. Serve with Spicy Tomato Relish.
    3. For the Spicy Tomato Relish: Combine all ingredients in a bowl and season with salt and pepper to taste. Serve at room temperature.
