Grilled Salmon With Roasted White Corn Salsa And Basil Cream
Ingredients
- 4 Tbsp. Extra virgin olive oil
- 2 tsp Grated lemon zest
- 2 Tbsp. Minced fresh mint
- 1/2 tsp Salt
- 1/4 tsp Freshly-grnd black pepper
- 6 x six-oz Salmon fillets or possibly steaks - 1/2" thick Roasted White Corn Salsa see * Note Basil Cream see * Note Cilantro or possibly mint sprigs
Directions
- Whisk extra virgin olive oil, zest, mint, salt and pepper together and marinate salmon in mix for 1 hour.
- At serving time, grill salmon over warm coals till just done. Place on hot plates with a heaping Tbsp. or possibly two of Roasted White Corn Salsa on top, hot Basil Cream around and a garnish of herb sprigs. Serve immediately.
- This recipe yields 6 servings.
