  • Grilled Salmon With East West Spice Rub And Orange Soy Glaz

    Ingredients

    • 1 Tbsp. sugar
    • 1 1/2 tsp five-spice pwdr
    • 1/2 tsp coriander
    • 1 1/2 tsp black pepper
    • 1/2 tsp salt
    • 3 x orange rind strips (3x1/2-inch)
    • 1/2 c. fresh orange juice
    • 1/2 c. low-sodium soy sauce
    • 1/2 c. honey
    • 2 Tbsp. chopped green onions
    • 1 Tbsp. chopped peeled fresh ginger
    • 1 1/2 tsp dark sesame oil
    • 4 x garlic cloves chopped
    • 1 x cinnamon stick (3-inch)
    • 8 x 6 oz salmon fillets (about 2 inches thick) Cooking spray
    • 1/4 c. thinly sliced green onions
    • 1 Tbsp. sesame seeds toasted

    Directions

    1. 1. For the spice mix: Combine first 5 ingredients in a small bowl.
    2. 2. For the glaze: Combine rind and. next 8 ingredients in a saucepan.
    3. Bring to a boil. Reduce heat, and simmer 10 min. Strain through a sieve; throw away solids.
    4. 3. Prepare grill:4. Rub fillets with spice mix. Cover; chill 10 min. Place, skin side down, on a grill rack coated with cooking spray. Grill 16 min, covered, or possibly till fish flakes easily when tested with a fork, basting occasionally with glaze. Remove skin; throw away. Arrange fillets on a platter; sprinkle with sliced onions and sesame seeds.
    5. NOTES : Do not remove the skin from the salmon till after you've taken it off the grill. The skin protects the flesh from the intense heat, allowing it to cook on just one side. This eliminates having to flip the fillets, that often fragments the fish.
    6. I made the Grilled Salmon which Pat shared with the group and I have to say itwas wonderful. I, of course, modified it somewhat. I scaled down the recipefor 2 people and instead of basting the fish with the glaze, I used my GeorgeForeman grill and served the glaze on top. I served it over Sesame Noodles.
