Grilled Plantain With Spicy Brown Sugar Glaze
Ingredients
- 4 x ripe plantains peeled, and bias-sliced 1/2" thick
- 2 Tbsp. Vegetable oil
- 4 Tbsp. Light brown sugar
- 2 Tbsp. Fresh orange juice
- 1 Tbsp. Honey
- 2 Tbsp. Coarsely minced cilantro Salt to taste Freshly-grnd black pepper to taste
Directions
- Preheat grill.
- Brush the plantains with the oil and grill till caramelized, about 2 min on each side. In a small bowl, combine the brown sugar, orange juice, honey and cilantro and brush on plantains. Season to taste with salt and pepper.
- This recipe yields 4 servings.
