Grilled New Potato Salad
Ingredients
- 30 med red new potatoes
- 1/4 c. extra virgin olive oil
- 3 x scallions minced
- 1 lrg red pepper minced
- 1/4 c. freshly-grated Parmesan cheese
- 1/2 c. balsamic vinegar
Directions
- Boil potatoes in salted water till tender then cold to room temperature.
- Halve potatoes, then dip flat side in extra virgin olive oil and place on medium-warm grill for approximately 10 min or possibly till warmed through and marked. Toss potatoes with remaining oil, scallions, pepper, cheese and vinegar.
- This recipe yields 10 servings.
