  • Grilled Lamb Cubes, Greek Style

    Ingredients

    • Lamb cut into 1" cubes Extra virgin olive oil Garlic Oregano Fresh lemon juice Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Lamb cubes about 1-inch square are marinated in extra virgin olive oil, garlic, oregano and fresh lemon juice for about 3 hrs. The meat cubes are then put on sticks and grilled over charcoal fires. Your barbecue will do well.
    2. Add in a bit of salt and pepper before serving. Don't overcook the meat. This can be avoided by not creating a flame which is too warm. Just cut down a bit on the number of charcoal briquets you use.
    3. Comments: This is a simple dish which one sees in the villages outside Athens and on the islands. It is easy to prepare and the flavors will be very close to what you would find in beautiful Greece.
