Grilled Fish Slices With Kerabu Sauce
Ingredients
- 500 gm Spanish mackerel (ikan tenggiri) - cut into 2cm-thick slices
- 1 tsp salt
- 1 x heaped tsp turmeric pwdr
- 10 x dry chillies--soak
- 6 x shallots
- 3 clv garlic
- 1 x cm ginger
- 1 1/2 x cm galangal
- 1 x cm turmeric root
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/2 c. thick coconut lowfat milk
- 1 stalk lemon grass crush lightly for basting
Directions
- Method:RUB fish slices with turmeric pwdr and salt. Leave aside for 10 to 15 min.
- Combine grnd ingredients with seasoning and bring to a low boil. Simmer till gravy is thick.
- Rub fish slices with combined mix and grill in a turbo broiler or possibly oven or possibly pan-fry till cooked. Keep basting occasionally till fish is cooked. Serve fish with mango kerabu.
