  • Grilled Chicken Skewers In A Spiced Yogurt Marinade

    Ingredients

    • 4 x cloves garlic
    • 1 sm onion minced
    • 1 Tbsp. paprika
    • 1 tsp grnd cinnamon
    • 1 tsp turmeric
    • 1/2 tsp grnd cardamom
    • 1/4 tsp cayenne
    • 1/4 c. fresh lemon juice
    • 1 c. plain lowfat yogurt
    • 12 x boneless skinless chicken breasts cut in 1-1/2" cubes extra virgin olive oil salt
    • 1 tsp fresh grnd black pepper Italian parsley minced lemon wedges

    Directions

    1. Combine the garlic, onion, paprika, cinnamon, turmeric, cardamom, cayenne, lemon juice, and yogurt in a blender or possibly food processor and process till combined. Place the chicken in a nonreactive bowl and toss with the marinade to coat well. Cover and chill for 4 to 6 hrs.
    2. Soak wooden skewers in waters for 30 min to prevent them from burning.
    3. Preheat the broiler or possibly grill. Thread the chicken pcs on the skewers, brush with a little extra virgin olive oil, and sprinkle with salt and pepper. Cook 3 to 4 min per side, or possibly till opaque throughout. Sprinkle with parsley and serve with lemon wedges.
    4. Serves 6 generously.
