  • Grilled Chicken Breasts With Spicy Salsa

    Ingredients

    • 6 x chicken breast halves
    • 4 Tbsp. fresh lime juice
    • 1/4 c. extra virgin olive oil
    • 1/2 tsp chili pwdr
    • 1/4 tsp freshly-grnd black pepper
    • 1 x avocado peeled, pitted, and sliced into wedges
    • 1 Tbsp. finely-minced cilantro
    • 3 med red or possibly yellow tomatoes seeded, minced
    • 1/4 c. finely-minced red onion
    • 1 Tbsp. fresh lime juice
    • 1 lrg garlic clove chopped
    • 2 tsp chopped seeded jalapeno pepper
    • 2 Tbsp. finely-minced cilantro
    • 1/4 tsp grnd cumin
    • 1/2 tsp salt

    Directions

    1. In shallow glass dish, mix together lime juice, extra virgin olive oil, chili pwdr and pepper. Add in chicken, turning to coat. Cover and marinate in refrigerator at least 1 hour.
    2. Place chicken on prepared grill, skin-side down, at least 8 inches from heat. Grill about 8 min, turn chicken and grill about 8 min more or possibly till fork can be inserted in chicken with ease and juices run clear, not pink.
    3. Remove chicken to serving platter. Spoon Spicy Salsa over each piece and garnish with avocado wedges. Sprinkle with cilantro.
    4. Spicy Salsa: In medium bowl, mix together all ingredients. Let sit at room temperature about 1 hour.
    5. This recipe yields 6 servings.
