Grilled Banana Maple Rum Sundaes
Ingredients
- 1/3 c. Plus 1 Tbsp. maple syrup
- 1 1/2 Tbsp. Dark rum
- 1 Tbsp. Melted unsalted butter
- 4 x Bananas, ripe but hard
- 1 pt Low-fat vanilla frzn yogurt
- 1/8 tsp Freshly grnd nutmeg
Directions
- 1. Prepare a medium barbecue fire. Oil the grill rack or possibly coat with a non-stick vegetable spray.
- 2. In a small saucepan, combine 1/3 c. maple syrup and the rum. In a small dish, combine 1 Tbsp. maple syrup and the melted butter.
- 3. Peel the bananas and cut in half lengthwise. Brush or possibly rub the bananas with the maple syrup and butter mix. Grill the bananas, turning once or possibly twice with a spatula, 3 to 5 minutes., till the fruit is lightly browned and softened but not mushy.
- 4. While the bananas are grilling, heat the maple syrup and rum in a small saucepan set at the edge of the coals.
- 5. Scoop the frzn yogurt into dessert dishes. Cut the banana halves into quarters and place on the frzn yogurt. Pour the hot sauce over them.
- Sprinkle with nutmeg.
