Grilled Avocado Jalapeno Corn
Ingredients
- 5 Ears fresh corn
- 2 Peeled and rinsed tomatillos
- 1 Jalapeno
- 1 Avocado halved
- 1/4 c fresh cilantro
- 1 tsp. lime juice
- 1/4 tsp. salt
- 1 clove garlic
Directions
- Shuck corn and grill over medium heat with peeled tomatillos, jalapeno and avocado for 5-10 minutes or until lightly charred, turning occasionally.
- Remove stem and seeds from pepper and scoop avocado from peel.
- Place in a small food processor with tomatillos, cilantro leaves lime juice, sale and garlic and puree until smooth.
- Cut corn from cob and stir in avocado mixture.
