Grew It Watermelon Salad
I so love my garden. It isn't too big but boy is it packed! I use as many different items as I can and create easy and healthy dishes. Ingredients
- Grew it - Medium sized watermelon.
- Grew it - 3 kinds of mint, regular, spearmint, and Chocolate mint.
- Grew it - Medium red onion.
- Grew it - Various kinds of lettuce and baby arugula.
- Grew it - 2 Round "lemon" cucumbers.
- Grew it - 2 Kinds of parsley.
- 1 oz. Can mandarin orange segments.
- 10 Pitted black olives.
- 1/4C + Horseradish cheddar cheese. Yum!
- Favorite nuts after salad is on your plate.
- Sprinkle salt and pepper on also if you want. (I'm not allowed salt and don't like pepper, but Mom likes it sometimes.) Suit yourself.
- Dressing
- 2T Honey
- 1/4t Powdered ginger
- 1/4C+ to taste, white balsamic vinegar
- 1/4C + to taste, mix of orange and pear juices.
- 1/2 C or less, Olive oil
Directions
- Remove any seeds from the salad ingredients
- Chop everything into favorite size bites and mix all together.
- Make dressing:
- In small bowl mix together all ingredients up to olive oil.
- Then slowly and strongly whisk in the olive oil to emulsify together so it won't separate.
- Dress the salad and wrap with plastic wrap. Refrigerate and give the salad time to infuse flavors, about 1 hour.
- Eat and please enjoy!
