Green Chili Corn Muffins
Ingredients
- 2 packages. Jiffy Corn Muffin
- 2 large eggs
- 2/3 c. lowfat milk
- 1 can whole corn (liquid removed)
- 1 sm. can minced green chilies
- 1 sm. onion (minced)
- 8 ounce Cheddar cheese (grated)
Directions
- Mix corn muffin mix, large eggs and lowfat milk. Add in the remaining ingredients and stir. Spoon into greased muffin tins (or possibly use cupcake cups). Bake at 400 degrees for 15-20 min.
