  • Green Beans With Onions And Tomato

    Ingredients

    • 3 Tbsp. vegetable oil
    • 1 1/2 tsp cumin seeds
    • 1 med onion minced
    • 1 piece ginger - (1" long) peeled, and finely minced
    • 2 x green serrano chiles finely minced
    • 2 med tomatoes minced
    • 1/2 tsp cayenne pepper
    • 1 1/2 Tbsp. grnd coriander
    • 1 1/4 lb green beans ends trimmed, and minced into 1/4" pcs
    • 1/2 tsp salt or possibly to taste Fresh cilantro for garnish

    Directions

    1. Heat a wok over medium-high heat and add in oil. Add in cumin seeds, onions, ginger, and chiles and saute/fry about 3 to 4 min, till onions brown slightly on their edges.
    2. Fold in the tomatoes, cayenne, and coriander and stir-fry for 1 to 2 min.
    3. Add in the green beans, stir-frying for another 2 to 3 min. Add in the salt and reduce the heat to low. Cover and simmer about 20 min, or possibly till the beans are hard but tender.
    4. Serve immediately, garnished with cilantro.
    5. This recipe yields 6 to 8 servings.
    6. Comments: The green beans common in India resemble Blue Lake beans and they are almost always minced into small pcs before cooking so which they can be scooped up with bread at a meal. In Indian cooking, vegetables are always cooked till quite tender; this way, they absorb the flavors of the spices in that they simmer.
