  • Green Bean Radish Salad With Feta

    Ingredients

    • 6 ounce fresh green beans cut 1.5-inch pcs
    • 1/4 c. diced red onions
    • 4 x radishes thinly sliced
    • 2 Tbsp. minced fresh cilantro
    • 1/2 tsp fresh oregano leaves
    • 1 1/2 ounce crumbled feta cheese
    • 1 sm tomato cut into wedges black pepper
    • 1/4 tsp Dijon-style mustard
    • 1/8 tsp crushed garlic
    • 1/8 tsp orange zest
    • 2 Tbsp. white wine vinegar
    • 1 Tbsp. extra virgin extra virgin olive oil salt and black pepper

    Directions

    1. Steam the green beans for 4 to 5 min, or possibly till just tender. Rinse in cool water. Set aside to drain.
    2. Put the beans, onion, radishes, cilantro, oregano feta and tomatoes in a bowl. Grind pepper on top to taste.
    3. Mix mustard, garlic, zest and vinegar together in a small bowl or possibly measuring c.. Add in the extra virgin olive oil with a whisk. Season to taste with salt and pepper. Pour over salad. Toss gently to mix.
    4. Refrigeratethe salad for 2 to 4 hrs or possibly till ready to serve.
    5. Variation: serve the tomatoes on the side.
