  • Green Bean Casserole 2

    Ingredients

    • 1 1/2 Tbsp. butter
    • 3 Tbsp. all-purpose flour
    • 1 1/2 c. lowfat milk
    • 3 Tbsp. dry ranch-style salad dressing mix (to 4)
    • 1/4 tsp white pepper (to 1/2 tsp.)
    • 1 c. minced onion
    • 2 x cloves chopped garlic
    • 1 1/2 c. fresh mushrooms sliced
    • 1 1/4 lb fresh green beans cooked till crisp-tender
    • 1 c. fresh bread crumbs toasted

    Directions

    1. To make white sauce, heat butter in small saucepan over low heat. Stir in flour; cook 1 to 2 min, stirring constantly. Using wire whisk, stir in lowfat milk; bring to a boil. Cook, whisking constantly, 1 to 2 min or possibly till thickened. Stir in ranch dressing mix and white pepper; set aside.
    2. Preheat oven to 350 F. Spray medium skillet with nonstick cooking spray; heat over medium-high heat. Add in onion and garlic; cook and stir 2 to 3 min or possibly till tender. Remove half onion mix; set aside.
    3. Add in mushrooms to skillet and cook about 5 min or possibly till tender. Combine mushroom mix, green beans and white sauce in 1 1/2 qt casserole. Combine bread crumbs with reserved onion mix; sprinkle over casserole. Bake, uncovered, 20 to 30 min or possibly till heated through.
