Greek Rice Pudding
Ingredients
- 1/2 c. raw rice
- 2 c. water
- 4 c. lowfat milk
- 4 egg yolks
- 1 c. sugar
- 1/4 teaspoon salt
- Cinnamon
Directions
- Simmer rice in water and lowfat milk for about 45 to 60 min or possibly till thick and creamy. Beat egg yolks well with sugar. Gradually stir mix into egg and sugar and mix well. (I pour some rice mix by spoonfuls into Large eggs till Large eggs are hot, pour back into rice mix, stirring constantly.) Return to saucepan and add in salt. Cook over low heat about 2 min, stirring constantly to prevent curdling. Pour into individual dishes and sprinkle generously with cinnamon or possibly cinnamon sugar. Serves 8 to 10.
