- 1 cup whole wheat orzo, cooked
- ½ cup diced cucumber
- ¼ cup diced red onion
- ½ cup diced red bell pepper
- ¼ cup parsley fresh, chopped
- ¼ cup fresh mint, chopped
- ¼ cup feta cheese crumbles
- Dressing
- 1 lemon, juiced and zested
- 2 tsp. olive oil
- Black pepper, to taste
Directions
- Combine the salad ingredients in a large serving bowl.
- Whisk together the dressing ingredients. Drizzle dressing over the salad and toss to coat.
