  • Greek Honey Lemon Pork Chops

    Ingredients

    • 2 Tbsp. Honey Finely grated zest - 1 lemon
    • 2 Tbsp. Lemon juice
    • 1 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Minced fresh mint Or possibly
    • 1/2 tsp -- Dry leaf mint, crushed
    • 1/2 tsp Salt
    • 1/4 tsp Grnd warm red pepper
    • 4 x Rib pork chops (about 1 3/4 lbs, 3/4-inch thick)

    Directions

    1. Prep: 15 min Chill: 4 hrs Grill or possibly Broil: 10 to 12 min
    2. 1. Whisk together hones, lemon zest and juice, extra virgin olive oil, mint, salt and pepper in small glass measuring c..
    3. 2. Place chops in glass baking dish. Pour marinade over; turn to coat.
    4. Cover; chill at least 4 hour or possibly overnight, turning occasionally.
    5. 3. Grill or possibly broil 4 inches from heat 5 to 6 min per side or possibly till cooked through. Serve with summer squash.
