Grecian Style Shrimp Scampi
Ingredients
- 1 c. Butter
- 1 c. Extra virgin olive oil
- 1 tsp Salt
- 1 tsp Pepper
- 1 Tbsp. Rosemary
- 1 tsp Oregeno
- 2 Tbsp. Paprika
- 4 x Bay Leaves
- 4 x Cloves Garlic, finely Minced
- 3 lb Jumbo Shrimp, peeled & Deveined
- 1 lb Feta Cheese, crumbled
- 1 c. Unseasoned Bread Crumbs
- 3 ounce Sherry
Directions
- Preheat oven to 375F. To make scampi sauce: In sauce over low flame heat butter, adding oil, salt, pepper, rosemary, oregeno, paprika, bay leaves, garlic and sherry. Place cleaned shrimp in large baking dish. Cover shrimp with feta cheese and top with breadcrumbs. Pour scampi sauce over shrimp and bake till shrimp are tender, approximately 25 min. Serve over rice or possibly angel hair pasta.
