  • Great Grandma's Christmas Cake Cookies

    Ingredients

    • 2 lbs. dates, pitted and cut in pcs
    • 1/2 pound candied cherries, quartered
    • 1/2 pound candied pineapple, thin slices
    • 1 pound minced, shelled nuts, walnuts or possibly pecans
    • 2 1/2 c. flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 teaspoon cinnamon
    • 1 c. butter
    • 1 1/2 c. sugar
    • 2 Large eggs

    Directions

    1. Work butter till soft and creamy. Add in sugar gradually. Mix well. Beat in Large eggs. Stir in dry ingredients and fruit and nuts. Drop by tsp. onto ungreased cookie sheet. Bake 10 min at 400 degrees. Don't over bake. Cold slightly and remove from cookie sheet. Makes 120 to 150 cookies. They keep very well. This is an old family recipe that my great grandmother has made for over 40 years.
