  • Grape and Corn Relish

    Sweet and savory relish that is beautiful to look at and has a fresh, slightly spicy flavor. The sweetness of the grapes and corn contrast with the bite of the peppers. Excellent when served with grilled fish or chicken. Try to find Champagne grapes if possible. They are very small, the size of currants, and the perfect sweetness for this dish.

    Ingredients

    • 1 cup cooked corn or thawed frozen corn
    • 1 cup small, seedless grapes, cut in half or quarters if large
    • 1/2 cup diced red bell pepper
    • 1 Tb diced jalapeno pepper
    • 1/4 cup minced parsley
    • 1/2 cup chopped scallions, white and tender green parts only
    • 2 Tb lime juice
    • pinch of salt

    Directions

    1. In a bowl toss all ingredients together. Cover and refrigerate at least 15 minutes for flavors to blend
