Granny's Swedish Rice Pudding
Ingredients
- 2/3 c. uncooked rice
- 1/2 teaspoon salt
- 2/3 c. sugar
- 3 tbsp. cornstarch
- 3 c. lowfat milk
- 3 egg yolks, beaten slightly
- 1 teaspoon vanilla
- 3 egg whites
- 2 tbsp. sugar
Directions
- Boil rice till tender. In a large pan, add in sugar, salt, cornstarch, lowfat milk, egg, and vanilla. Add in boiled rice to lowfat milk mix and boil till thick, stirring well. Put in casserole, put on meringue and bake 15 min in a 350 degree oven.
- For meringue, beat egg whites till stiff with sugar.
