  • Granny's Meatloaf With Wild Mushroom Gravy

    Ingredients

    • 3 lb grnd beef
    • 1 x egg
    • 1 c. diced sweet bell pepper
    • 1 c. diced onion
    • 2 Tbsp. fragrant ketchup
    • 1 Tbsp. whole seed mustard
    • 1 pch thyme Salt to taste Freshly-grnd black pepper to taste
    • 2 Tbsp. peanut oil
    • 1 x garlic clove chopped
    • 1 lb shiitake mushrooms sliced
    • 1 lb portobello mushrooms sliced
    • 1 lb chanterelle mushrooms sliced Salt to taste
    • 1 Tbsp. marjoram
    • 1 1/2 c. beef or possibly vegetable stock Freshly-cracked black pepper to taste

    Directions

    1. Preheat oven 450 degrees. Mix all ingredients very well. Put into a 4- by 4- by 9-inch baking pan. Bounce pan on counter till packed, then bake for 50 min.
    2. For the sauce: Heat oil in pan, add in garlic and mushrooms and salt and cook till soft. Add in marjoram and remove from heat. Use equal parts of meatloaf fat and flour and make brown roux in heavy saute/fry pan over medium-high heat. Add in stock while stirring, then strain. Return gravy to pan, add in mushrooms and reduce till thickened. Season with fresh pepper.
    3. This recipe yields 4 servings.
