Grandmother Gertrude's Egg Casserole
Ingredients
- 1 Tbsp. butter
- 1 Tbsp. flour
- 1 c. lowfat milk
- 1/2 tsp thyme
- 1/4 tsp marjoram
- 1/4 tsp basil
- 1/4 c. finely-minced parsley or possibly judicious amounts of whatever fresh herbs are in the garden
- 1/4 lb bacon or possibly sausage sauteed, liquid removed, and crumbled
- 1/3 c. dry bread crumbs (optional), buttered
Directions
- Make a roux with butter and flour; add in lowfat milk, herbs, and cheese. Then in a casserole dish put a layer of Large eggs, bacon, parsley, and sauce. Repeat. Sprinkle bread crumbs on top.
- Cook uncovered in 350 degree oven for 30 min. This dish benefits greatly from the homemade bacon and sausage we get from our local butcher, but we've also used vacuum-packed linguisa to good effect.
- This recipe yields 6 servings.
