  • Grandmother Gertrude's Egg Casserole

    Ingredients

    • 1 Tbsp. butter
    • 1 Tbsp. flour
    • 1 c. lowfat milk
    • 1/2 tsp thyme
    • 1/4 tsp marjoram
    • 1/4 tsp basil
    • 1/4 c. finely-minced parsley or possibly judicious amounts of whatever fresh herbs are in the garden
    • 1/4 lb bacon or possibly sausage sauteed, liquid removed, and crumbled
    • 1/3 c. dry bread crumbs (optional), buttered

    Directions

    1. Make a roux with butter and flour; add in lowfat milk, herbs, and cheese. Then in a casserole dish put a layer of Large eggs, bacon, parsley, and sauce. Repeat. Sprinkle bread crumbs on top.
    2. Cook uncovered in 350 degree oven for 30 min. This dish benefits greatly from the homemade bacon and sausage we get from our local butcher, but we've also used vacuum-packed linguisa to good effect.
    3. This recipe yields 6 servings.
    4. Comments: This is my grandmother's recipe from Rockford, Illinois. Whenever somebody was getting married and you were going to have a fancy brunch for them, you made my Grandmother Gertrude's egg casserole.
