  • Grandma and Moms lemon cake with there chocolate icing.

    This recipe was given to me by my mom handed down by her mom.

    Ingredients

    • 2c flour
    • 2 tsp baking powder
    • 3/4 tsp salt
    • 11/2c sugar
    • 1/3c shortening softened
    • 1/3c butter softened
    • 1c milk
    • 1tsp pure lemon flavoring
    • 3 eggs
    • 1cblack walnuts must be black walnuts
    • 1c raisins
    • Chocolate Icing Recipe
    • 1 stickbutter
    • 1 can of evaporated milk
    • 3 Tbsp cocoa
    • 2c granulated sugar

    Directions

    1. Preheat oven to 350 degrees grease and flour to round cake pans.
    2. Sift flour baking powder and salt together in a bowl set aside.Take a little flour mixture out and put in another bowl and stir nut and raisins in coat them well set aside.meanwhile cream shortening,butter and sugar til smooth,then add eggs one at a time til mixed well.Stir in nut and raisin mixture.Pour into pan evenly.Bake for 35 to 40 mins or til golden brown and tooth stuck in center comes out clean.Cool for 10 mins in pans then take out and cool completely on wire rack. Ice cake with this icing.For icing you melt 1stick of butter,stir in 3Tbsp cocoa after dissolved stir in one can of evaporated milk and 2c sugar bring to a boil and boil hard for 2 mins stiring.Remove from stove and cool for 10 mins.Then ice cooled cake.
