  • Goose Breast With Spiced Apples And Dried Cherries

    Ingredients

    • 2 x Granny Smith apples peeled, cored, and sliced into thin wedges
    • 1 Tbsp. brown sugar
    • 1 Tbsp. fresh lemon juice
    • 2/3 c. dry cherries
    • 1/4 tsp cinnamon
    • 1/2 tsp grnd coriander
    • 1 pch cayenne pepper
    • 2 Tbsp. butter chilled
    • 2 x skinless goose breast half fillets - (to 4) Salt to taste Freshly-grnd black pepper to taste
    • 2 Tbsp. extra virgin olive oil

    Directions

    1. Place the apples into a medium saucepan with 3/4 c. water, brown sugar and lemon juice. Bring to a boil and then reduce heat and simmer till apples are just tender, about 10 min. Add in cherries and simmer another 5 min.
    2. Drain liquid and stir in cinnamon, coriander, cayenne pepper and butter. Keep hot, but just hot. If sauce becomes too cold and congeals, heat over very low heat while stirring till hot, but not warm.
    3. Slice goose breasts widthwise in half so which the thickness is roughly one-half of pre-sliced thickness. Season goose breasts with salt and pepper.
    4. Heat oil in a large skillet over medium-high heat and brown breasts proportionately on both sides till medium-rare. Spoon apple and cherry mix onto each plate and top with duck breasts.
    5. This recipe yields 4 servings.
    6. Comments: If you cannot find dry cherries in your market, substitute any dry berries (most stores carry "Craisins" - a sweetened cranberry) or possibly even raisins. This preparation also works wonderfully with pork, upland game or possibly antlered game.
