  • Golden Rum Cake

    Ingredients

    • 1/2 cup chopped pecans
    • 1 pkg. (18.5 oz) yellow cake mix with pudding in the mix
    • 3 eggs
    • 1/2 cup cold water
    • 1/3 cup vegetable oil
    • 1/2 cup dark rum
    • Glaze:
    • 1/2 cup (1 stick) butter
    • 1/4 cup water
    • 1 cup sugar
    • 1/2 cup rum

    Directions

    1. Preheat oven to 325 F
    2. Grease and flour bundt pan.
    3. Sprinkle nuts over the bottom of the pan.
    4. Mix together all remaining ingredients except the glaze
    5. Pour batter over the nuts.
    6. Bake for 1 hour
    7. Cool in pan on rack
    8. Invert cake onto rack over a pan to catch dripping glaze
    9. Prepare glaze:
    10. Melt the butter in a saucepan.
    11. Stir in the water and sugar
    12. Boil 5 minutes, stirring constantly
    13. Remove from the heat
    14. Stir in rum
    15. Prick top of cake all over with an ice pick or a toothpick
    16. pour glaze over top and sides of the cake
    17. Repeat until all the glaze is absorbed in the cake
