Golden Parmesan Chicken w/ Garlic Mayonnaise Dip
These are great as an appetizer for parties or as a light lunch. Kids love them cold as a snack. Ingredients
- 4 Chicken breasts, skin removed
- 1 1/2 cups fresh white breadcrumbs
- 1 1/2 oz Parmesan cheese, finely grated
- 2 Tbsp chopped fresh parsley
- 2 eggs, beaten
- 1/4 cup melted butter
- salt and pepper
- For Garlic Mayo
- 1/2 cup Mayo
- 1/2 cup Cream cheese
- 1-2 cloves garlic, crushed
Directions
- Preheat Oven to 350 after chill time.
- Cut each breast into 4 or 5 chunks.
- Mix together breadcrumbs, parmesan, parsley and salt + pepper in a shallow dish.
- Dip chicken in the egg then into the breadcrumb mix and place in a single layer on a baking sheet and chill in the fridge for 30 mins.
- Make Garlic mayo, mix together mayo, cream cheese and garlic. season with salt and pepper. chill.
- Place chicken in an oven proof dish, make sure they are not touching. Drizzle with melted butter.
- Cook for approx 20 mins, until golden and crispy.
