  • Golden Nuggets With Plum Sauce

    Ingredients

    • 1 1/2 c. buttermilk
    • 2 Tbsp. fresh lemon juice
    • 2 tsp Worcestershire sauce
    • 2 tsp soy sauce
    • 1 tsp paprika
    • 1 tsp dry basil
    • 1 tsp dry oregano
    • 1/2 tsp salt
    • 1 tsp grnd black pepper
    • 2 med garlic cloves chopped
    • 2 lb boneless skinless chicken breast halves 1-1/2 pcs
    • 1/4 c. butter unsalted
    • 1/4 c. vegetable shortening solid
    • 4 c. fresh bread crumbs
    • 2/3 c. sesame seeds Plum Sauce (see below)
    • 1 1/2 c. jam red plum
    • 1 1/2 Tbsp. mustard (ball-park style)
    • 1 1/2 Tbsp. horseradish prepared
    • 1 1/2 tsp fresh lemon juice

    Directions

    1. In a large bowl, combine buttermilk, lemon juice, Worcestershire sauce, soy sauce, paprika, basil, oregano, salt, pepper and garlic. Add in chicken and toss to coat well. Cover with plastic wrap and chill overnight.
    2. Preheat oven to 375 degrees. Lightly grease two 13"x9" baking dishes and set aside. In a small saucepan, heat butter and shortening together. Set aside. Drain chicken thoroughly. In a medium bowl, combine bread crumbs and sesame seeds, mixing well. Add in chicken and toss to coat well. Shake off excess topping. Place chicken in a single layer in greased baking dishes and drizzle butter mix over top. Bake in preheated oven till golden and crisp. (30-35 mins)
    3. Meanwhile, prepare Plum Sauce (below). Set bowl of sauce in center of a platter. Place nuggets in circles around bowl and serve warm.
    4. Makes 50-60pieces.
    5. Plum Sauce: In a medium saucepan, combine all ingredients and cook over medium heat till warm. Transfer sauce to small serving bowl.
