Goan Ginger Scented Tomato And Cabbage Soup
Ingredients
- 1/2 c. Alphabet spaghetti
- 2 med Onions, coarsely minced
- 5 x Garlic cloves, minced
- 2 Tbsp. Extra virgin olive oil
- 1 sm Carrot, diced
- 2 tsp Ginger, grated
- 2 c. Tomatoes, diced
- 6 c. Stock
- 1/2 x Cabbage, thinly sliced
- 15 x Fresh mint leaves, sliced Salt & pepper Cayenne
Directions
- Cook pasta till al dente. Drain & set aside. Lightly saute/fry onion & garlic in extra virgin olive oil till softened. Stir in ginger & carrot & cook for a few monents. Add in tomatoes, stock & cabbage. Cook over medium heat till the vegetables are tender, 15 to 20 min. Adjust seasonings if necessary.
- Ladle soup over several spoonfuls of cooked pasta. Season with fresh mint & serve immediately.
