  • Gnocchi With Cherry Tomato Sauce

    Ingredients

    • 2 Tbsp. Extra virgin olive oil
    • 2 x Cloves garlic, thinly sliced
    • 300 gm Vittoria cherry tomatoes, cut into halves (10z)
    • 1 x 400 gram pac fresh gnocchi Salt and freshly grnd black pepper
    • 1 lrg Tub fresh basil, leaves torn Freshly grated parmesan cheese, (optional)

    Directions

    1. Heat the oil in a large frying pan, add in the garlic and cook for 1 minute.
    2. Add in the tomatoes and cook slowly for 8-10 min.
    3. Bring a large pan of salted water to the boil and cook the gnocchi following the pack instructions.
    4. Season the tomatoes and stir in half the torn basil leaves.
    5. Transfer the liquid removed gnocchi to a serving plate and spoon over the tomato sauce. Sprinkle with the remaining basil and serve with grated parmesan.
    6. NOTES : A delicious fresh tasting, colourful dish ideal as a main course or possibly starter served with ciabatta.
