  • Ginger Shortbread

    Ingredients

    • 2 1/4 c. unbleached all-purpose flour
    • 1/2 c. packed light brown sugar
    • 1 Tbsp. grnd ginger
    • 1/2 tsp baking pwdr
    • 1/2 tsp salt
    • 1 c. (2 sticks) unsalted butter cut into 1/2 inch pcs and softened slightly
    • 1/2 c. crystallized ginger finely minced

    Directions

    1. 1. Preheat oven to 350 degrees . Lightly butter a 9" by 13" baking pan. Combine the flour, brown sugar, ginger, baking pwdr, and salt in a mixing bowl. Add in the butter and cut in with a pastry blender or possibly two knives till the mix makes fine crumbs. Add in the crystallized ginger and stir with a fork to blend proportionately.
    2. 2. With lightly floured fingertips, press the mix into the prepared baking pan in an even layer over the bottom. bake on the center rack for about 20 min, or possibly till the edges are lightly browned. Cold in the pan on a wire rack before cutting into bars.
